Continuing from my mistake of posting too soon...
We let our yeast proof before adding any flour.
Erin - what has worked best for us is to let the bread completely cool for a couple of hours. It is also helpful to have a really good bread knife.
I hope Sprightly will bake me some bread when we visit.
